So this meal is so super and can be made gluten-free!
- 1 package of chicken breasts (cut in half the long way)
- a package of baby bok choy
- 1 package of scallions
- gluten-free tamari sauce
- sea salt
- grape seed oil
So my husband is a pro at this meal! This is one of his favorite choices for a healthy meal!
He slices the chicken breasts using only about two into about an inch thick, and puts them aside. We use one of those 8 quart multi cookers to steam the food.
Fill the water in the bottom pan about an inch and half or so give or take the size of your cooker. Place the chicken inside and layer the bok choy on top of it. . Pre heat the burner for two minutes. Steam cook on high for 15 minutes.
In the meantime its time to make the sauce!
Combine in a small bowl a pinch of sea salt, 2 Tablespoons of the tamari sauce, 1 Tablespoon of ginger, 1/2 cup of the grape seed oil and 1/4 cup of trimmed scallions. Mix together.
Plate the bok choy on the dish with chicken layered on top, pour sauce over and ENJOY!!!
