Super Simple Capresse Quinoa Bake

So this is my version of the Capresse Quinoa Bake. It’s so simple and light for any healthy summer dinner or lunch.


  • Whole organic quinoa
  • 1 package of grape tomatoes
  • a few leaves of fresh basil
  • Whole mozzarella
  • 3 Tablespoons of EVOO

Make sure to wash and drain the quinoa and cook in boiling water for about 15 minutes until fluffy. While that is cooking in a skillet I saute the package of grape tomatoes with the EVOO until tender. Cut up the fresh basil and mozzarella . Preheat the oven to 350 degrees. Once the tomatoes and quinoa are done cooking mix all the ingredients into a bowl and pour into a baking dish. Cook at 350 degrees for 20 minutes. So delicious!
